Strawberries in Paris: Going Veggie with Beffy and Kelly
Our lovely best girl Bethany is a vegetarian and I fully support that, except there is no way I could ever give up pig… but we will definitely continue to make vegetarian dishes in her presence! So the last time we made a meal together was Halloween and Deb really came through with an awesome recipe, so we went back to her again. But this time we made it a little more hearty (via mushrooms and pasta!) and boy was it good.

The recipe can be seen here. It was really pretty simple to follow, especially if you have two sous chefs! And Bethany had bought some broccoli at the store, so I taught them my favorite trick to make broccoli amazing. Roasting it at 375 deg for 20 minutes with lots of evoo and salt and pepper!
So you ready to see some more yellowy food?? Well here goes nothing!!
So this may or may not have made an early appearance to our evening… It was almost gone when Kelly and I arrived from previous social gatherings at Beffy’s house and I could not NOT take a picture. I love how I can see my reflection in the crazy bottle!

And here was the other fun addition to the night. Pink Prosecco, nothing better!!
And then we started cooking! Here is the “mirepoix” with some dried herbs.
And before we cooked that, we cooked 3 pound of portabello mushrooms! It’s amazing how they cook down so much!
Ack my eyes! Sorry for the blurryness, maybe I had too much prosecco or maybe I don’t know how to use my camera properly. You be the judge. Then we added the red wine, followed by tomato paste and vegetable broth!
And after some magical cooking and mixing – ta-da! Dinner. Yummmmmm. We topped it off with some yogurt and green onions.
This is definitely a stellar bourguignon and I really didn’t miss the meat too much. Nice recipe Deb! Now I wonder what we will cook for our next girl’s night???

I just want to make the joke now. Pitt is headed to the Compass Bowl because their program has no direction. I’m sure somebody got that joke in print before I did, but if you’re in need of a real zinger around the watercooler, there you go. And there’s Michigan. Headed to the Gator Bowl to play a team that beat Florida while only attempting 9 passes. If you’re looking for a good time, watch a bad Michigan defense get lit up by a offense that isn’t trying hard to do anything but run the ball over and over again.
